COCONUT RICE

INGREDIENTS;idia kitchen

4 cups of coconut milk

4 cups of rice

1 cup of crayfish

2 cups of hot water

Pepper to taste

Meat/Fish/Goatmeat

Dried fish

1 bulb onions

Seasoning cubes

Salt to taste

Vegetable oil

Vegetables; carrot, spring leaves, peas and red pepper.

DIRECTIONS

For coconut milk, grate the coconut and soak in hot water for 20mins, squeeze through with you hands and pass through sieve.

Season the meat and cook till soft, then fry the meat

Parboil the rice for  10mins, wash out some of the starch with clean water. Put rice in pot and add coconut milk and little water. Add the stock from the meat. Add pepper, onions, seasoning cubes, salt and crayfish. Add dried fish after about 10mins. Allow to cook till it start to dry for about 20mins, reduce the heat and confirm that it is soft.

Heat oil in a pan and fry the vegetables with onions for about 5mins. Add some fish and meat to it.

Remove from heat and serve, you may like to add some plantain to it if desired.
