Afang soup is a traditional Akwa ibom soup, it is usually prepared on special occasions, the soup is known for its protein nous nutrients and it is basically known for the special Afan leave used in preparing it.
INGREDIENTS;
- 2 cups of afang leaves(chopped and pounded/blended)
- 2 cups of spinach/waterleaf(chopped)
- 1kilo of beef/cow foot/kpomo
- 1 tablespoon crayfish
- 1 teaspoon pepper
- ½ cup palm oil
- 1 Maggi cube
- ½ onion
- 1 cup periwinkles(top and tailed washed with hot water)
PREPARATION STEPS;
vIn a clean pot, boil all the meats with onions, salt, pepper and Maggi. Boil till they are tender approximately 20mins depending on your protein
vEnsure the stock has reduced till there is only about a cup left in the pot. Add the periwinkle and boil 5mins more.
vAdd crayfish, pepper, palm oil and boil for 5mins
vAdd chopped spinach/waterleaf and allow cooking for 2mins before stirring. Stir the soup and taste for salt. Add more salt if needed.
vAdd the afang leaf and stir. Allow to a simmer on medium heat for 7 mins
vServe with your favorite’s carbohydrate. Amala, Foo-foo, Eba etc.
