PLANTAIN AND GIZZARD (Gizdodo)

What about a meal of gizdodo? We are always happy when we see recipes in which plantain is one of the main ingredients. In certain cuisines, plantain is a chief recipe for the preparation of such meal. Hence, the relevance of the plantain has increased. The gizdodo is one of today’s party favourites and it looks like it is going to top the list for a very long time. The recipe is unique and of course tasty which makes it very desirable.
Ingredients
• Ripe Plantains
• Gizzards
• Pepper paste (A mix of Habanero Peppers, Red bell peppers or ghost chilli peppers)
• Palm Oil
• Ginger
• Garlic
• Onions
• Salt/Seasoning
Prep Time: 30-45 minutes
Procedure
1. Boil gizzards in chicken stock with crushed garlic and ginger.
2. Cut ripe plantains into cubes and fry in medium heat till golden brown.
3. Drain gizzards of meat stock and plantains of excess oil.
4. Fry gizzards slightly till they turn brown and drain off excess oil.
5. Heat palm oil and add some onions.
6. Pour in pepper paste into the hot oil till it is cooked and thick.
7. Gently stir in gizzards and plantain into the sauce.
8. Serve either hot or cold according to preference.
Enjoy best either as a dish on its own or with rice, beans, spaghetti, breadfruit meal, etc.
